- Bake in preheated oven 40mins 150°C
- For ube swiss meringue buttercream, mix egg whites and sugar in a bowl
- Put bowl on top of boiling water, continuously mix until sugar is dissolved, remove from heat
- Mix in high speed until it thickens then put in freezer for 15mins
- Then put it in mixer again and gradually add softened butter, mix in high speed, scrape sides then mix again
- Put ube halaya, ube and vanilla flavor, mix again
- Assemble cake and top with macapuno
